Avocados are my favorite and eggs are my usual go-to breakfast most days. You can buy pre-boiled eggs from Costco as well. I prefer my yolks to be a little softer so prefer boiling them myself. If you decide to boil eggs at home then 4-6 minutes is the sweet spot for the soft yolk and if you like them cooked then 8-10 minutes is good. After you have boiled eggs and de-shelled them you are ready to go. Add all ingredients together and voila your breakfast is served. Enjoy this with some low carb or gluten-free toast or better yet some cauliflower crackers.


- 6 large eggs
- 1 avocado
- 4 bacon slices
- 1 tsp paprika
- 1/2 tsp dill
- 1 tsp everything seasoning
- 1 handful cilantro
- dash himalayan salt
- dash black pepper
- Boil 6 eggs for 6-7 minutes on medium heat
- While eggs are boiling prepare the bacon on the stove and set aside to cool off
- Mash the avocado and add all spices in a bowl
- Once the eggs are done put them in cold water to cool off
- Peel the eggs and cut them in small squares
- Bacon should be crunchy and ready to break in bits and add to the mixture
- Mix everything and enjoy!
